Enology: The Art and Science of Wine

An introduction to the multi-dimensional approaches to viticulture and the methodology of wine-making, perspectives on manufacturing, and marketing of wines. The influence of history, geography, and technology on wines of the world as well as the wine-making movement in Northeast Ohio. Emphasis will be placed on the development and refinement of sensory evaluation techniques.

Hands-on, face-to-face course. Students must be 21 years of age prior to the start of the class. Drivers license required.

Learning Objectives:
  • Gain a working vocabulary of the history of wine, wine-making and the various styles and differences of wine.
  • Explain the process of wine-making and the ingredients involved.
  • Become familiar with the scientific principles and methodologies as they relate to winemaking, fermentation, and sensory evaluation techniques.
  • Develop a greater appreciation of wine and wine-making as it relates to growing industry trends.
